Category: Chocolate

Made with single-estate cacao from Hacienda Victoria, this 66% Ecuador dark chocolate is blended with toasted sourdough crumbs from Pump Street’s own bakery and finished with a touch of Halen Môn sea salt. Deep cocoa notes meet rich malt and toasted breadcrumb flavours, while the sourdough adds a subtle crunch and savoury complexity, a distinctive bar that balances texture with intensity.

Pump Street’s background as a bakery makes this bar a natural extension of their craft. Their commitment to ethically sourced cacao, traditional baking techniques and small-batch bean-to-bar production underpins this innovative bar - believed to have been the first chocolate made with sourdough when originally launched.

Ingredients:
Cocoa beans, cane sugar, cocoa butter, sourdough breadcrumbs (12%) (wheatflour with added calcium, iron, niacin and thiamine, sea salt), Halen Môn sea salt (<1%). Dark chocolate contains minimum cocoa solids 66%. For allergens, see ingredients in bold. May contain milk, eggs, nuts and sesame seeds.

That balance of salty and sweet is spot on, and the sourdough crumbs give it this subtle toasty depth that keeps you reaching for one more square. The 66% bar melts slow and creamy, not waxy at all.

Isabella ★★★★★

The crunch from those toasted sourdough crumbs is what sold me—it's subtle but adds this lovely bakery note that plays off the 66% cacao without getting bitter. The Halen Môn sea salt hits at the end and makes each square feel a little more special than your average dark bar.

Julian Q. ★★★★★

The toasted sourdough bits give it a surprising crunch that melts right into the cacao, and the Halen Môn salt really lifts the whole bar. I've already eaten two squares more than I planned tonight—it's that kind of chocolate.
