Grown in the high-altitude of Saladoblanco, this Pacamara lot comes from Rigo Cuellar, a producer working with native shade cover, selective picking, and careful fermentation. It reflects the values of the region: family-led production, traditional methods, and a clear focus on cup quality.

After harvest, cherries undergo controlled oxidation before pulping. The coffee is then fermented anaerobically in sealed tanks with partial mucilage intact, contributing to depth and body. It’s lightly washed, then dried on raised beds for up to 20 days. The result: a structured, expressive honey process with clarity and sweetness.

First pour and I already noticed the difference — the selective picking and careful fermentation come through as a clean, bright cup without any of the muddiness you get from lower-grade beans. This Pacamara from Saladoblanco is easily the most balanced coffee I've had this month.

The high-altitude Pacamara really shines here—you can taste the care in the selective picking, with a clean, sweet cup that stays balanced even as it cools. It's become my weekend ritual, and I'm already planning to reorder.

Henry ★★★★★

I brewed this as a pour-over and the sweetness really came through, which isn't always the case with high-altitude beans. You can tell the selective picking and slow fermentation make a difference, it's a clean, delicate cup without any harsh edges. Going straight on my reorder list.
